The Osma Pro is the latest countertop coffee maker that claims ultra-fast cold brew. How? Through San Francisco startup Osma's patent-pending Harmonic Microcavitation process.

Basically, ice water is recirculated through a high-pressure portafilter, which concentrates the coffee through several cycles in just 90 seconds.

But there is another layer. Harmonics uses controlled acoustic vibrations throughout the process to bring out additional flavors. The combination of these two systems brings out flavor compounds that were previously lost with longer extraction times.

All of this works to produce a very fast cold brew, and in style. The first model of the Osma Pro, built to mimic a classic espresso machine, is a simple, almost brutal design. Simply drop the intake wand into a cup of ice water and wait for the machine to pass through the portafilter and back into the cup. There is no need to fiddle with obscure menus or settings, just the filter, intake, and power button.

The lack of extra features may work against it; with a price tag of $695, the Osma Pro is not for the everyday user. But in a world where anything from chai tea to makgeolli can be made with a home brewer, it's refreshing to see a focus on quality over quantity.

This is certainly one for the cold brew enthusiast, but if you're an over-iced connoisseur, you'll need to hurry. The Osma Pro is the first limited production run, and the first 1,000 units are now available for pre-order.
